• Better For You Chocolate Chip Cookies

    As a self proclaimed chocoholic, I am always looking for ways to make my favorite treats offer a little more nutritional value. There are a lot of healthy swaps, and additions you can make to your favorite recipes to make them healthier. These cookies have added ground flax seed for a dose of omega 3’s, oatmeal for added fiber, and a reduced amount of sugar. These changes are so subtle that even the most discerning palates wont be able to tell the difference!

    Ingredients:

    1 cup butter

    1 cup white sugar

    3/4 cup brown sugar

    2 tsp vanilla

    2 eggs

    3 cups flour

    2 tsp baking soda

    2 tsp cinnamon

    dash of sea salt

    1 cup ground flax seed

    1 cup rolled oats

    1 cup chocolate chips

    Directions:

    Preheat oven to 350 degrees. Grease cookie sheets, or line with parchment paper. In a large bowl, cream the butter, sugars and vanilla together until light and fluffy. Add eggs and beat well. Combine flour, baking soda, cinnamon and salt and then gradually stir that mixture into the butter/sugar mixture. Fold in the flax, oats and chocolate chips. Drop by spoonfuls onto prepared cookie sheet. Bake for 10-12 minutes, cool on wire rack. Makes about 4 dozen 2 inch cookies.
