Busy mornings call for easy breakfasts. I love having healthy options that are ready to go that the kids love. Typical store bought muffins contain the same ingredients as cake- making a muffin basically “breakfast cake”. Don’t get me wrong, there are days when cake for breakfast is totally acceptable and needed, but if muffins are a daily occurrence (like they are at my house), finding a healthier alternative is a great idea!
These muffins are packed with fiber, omega 3’s and protein to keep you full and satiated. I love to use a protein containing pancake mix, like Kodiak Cakes, to boost the protein content. Another easy swap I made in these muffins was swapping the butter for applesauce. The applesauce makes them extra moist and reduces the amount of saturated fat significantly. If you aren’t into chocolate, you could sub dried fruit, nuts or coconut in its place.
Ingredients:
2 cups protein containing pancake mix (like Kodiak)
3/4 cup milk (I used soy milk)
1/2 cup brown sugar
1/2 cup chocolate chips
1/4 cup applesauce (or melted butter)
2 bananas, mashed
2 eggs
1 tsp vanilla
Directions:
Preheat oven to 350. Combine all ingredients in a bowl and blend until smooth. Fill the lined muffin tins 3/4 full and bake for 15 minutes or until tops are golden.
