As a mom on the go, most days I am packing snacks for myself and my kids while we do all the after school activities. It’s easy to get stuck in the packaged snack rut because they are convenient and quick to grab- and lets be honest- sometimes this is the best we can do! I have found with a small amount of preparation, I can get a healthier option prepped and ready to just as easily grab on those busy days. I love these energy balls because they are made primarily with whole food ingredients, they are rich in fiber and omega 3’s, and they are super filling- perfect for fueling those long afternoons with multiple practices!
Ingredients:
1 cup oatmeal
1/2 cup chocolate chips
1 tsp vanilla extract
1 tbsp chia seeds
1/2 cup ground flax seed
1 cup drippy peanut butter or almond butter
1 tsp maple syrup (optional)
Directions:
Mix all ingredients together in a large bowl until a dough forms. Combine into one inch balls and store in the refrigerator.
