• Easy Crock Pot Beef Tacos

    My family loves this recipe and its perfect for those nights when you need something ready when you get home! There is a small amount of prep work in the morning, let it cook all day, and then another few minutes of prep to finish it off. No 30 minute or one hour add one last ingredient step, because those just kill the convenience of a crock pot recipe!

    We all love the fresh flavors from fresh cilantro and fresh tomato, and our favorite toppings are guac, a sprinkle of fresh grated cheese and a dollop of sour cream. Let me know if you give this one a try!

    Ingredients:

    1 boneless beef chuck roast

    salt and pepper to taste

    1 bunch of fresh cilantro

    1 large diced tomato

    1 9oz can of mild green chiles

    Suggested taco toppings: cheese, guacamole, sour cream

    Directions:

    Season the roast with salt and pepper. Brown both sides for 3-4 minutes. Place into slow cooker and set on low for 8 hours. Remove some of the liquid as it cooks (I do this a few times during the 8 hour cook). Once it is done, remove it from the slow cooker and shred it. Place back into the slow cooker on saute (or a pan if your slow cooker does not have the saute function). Add the chopped cilantro, chopped tomato and green chilies. Saute until the cilantro starts to wilt. Season with additional salt and pepper to taste.
