    Homemade Granola Bars

    If your kids are anything like mine, they love a good “Bar”. We go through tons of them each week and I’m always on the hunt to find a healthier option as many of the store bought versions contain a ton of sugar, or have an ingredients list that is a mile long. So many “kid snacks” are chocked full of extra sugar, food additives and preservatives- all of these are things I try to avoid.

    These bars are simple and have the classic peanut butter and chocolate flavor profile. You could adapt these in so many ways to include other things like nuts or dried fruit, or even superfoods like chia or hemp seeds. They are easy to prepare and keep in the refrigerator for 4-5 days.

    Ingredients:

    1 cup smooth peanut butter or almond butter

    1/2 cup honey

    1tsp vanilla extract

    2 1/2 cups rolled oats

    1/3 cup mini chocolate chips

    Directions:

    Line an 8×8 pan with parchment paper. Mix all ingredients together in a large bowl and then press flat into the pan. Refrigerate for 3-4 hours. You could also keep them in the freezer.
